Under the general direction of the Assistant Correctional Food Manager, the Supervising Correctional Cook (SCC) may be assigned to the Main Kitchen or H-Unit on second or third watch.
Supervises the preparation, cooking, and serving of meals for incarcerated person population. Oversees the main production and feeding line. Determines the amount of food to be prepared, and ensures menus are followed according to the Standardized Menu. Assigns work, supervises, and give instruction/training to Correctional Supervising Cooks. Supervises daily sanitation and upholds sanitation standards. Supervises the maintenance of culinary equipment and submits work orders as needed. Conducts inspections and maintains food handling practices and standards of safety/sanitation. Responsible for ordering and receiving supplies. Inspection of items, stores, and supplies to ensure it is sufficient, wholesome, and in code compliance. Maintains records and prepares reports as needed. Evaluates work performance of Correctional Supervising Cooks, responsible for performance evaluations, takes or recommends appropriate action. Receives sick calls during on and off duty hours and covers absences. May act behind the Correctional Food Manager II-DOC, or Assistant Correctional Food Manager-DOC in their absence.

San Quentin Rehab Center is California’s oldest and best-known correctional institution, which was established on the site currently known as Point San Quentin, in July of 1852, as an answer to the rampant lawlessness in California at the time. The prison rests overlooking the bay on 432 acres and is located just 12 miles north of the Golden Gate Bridge in the county of Marin. The walled prison is made up of four (4) large cell blocks (West, South, North, and East Block), one (1) maximum security cell block (the Adjustment Center), Central Health Care Service Building, a medium security dorm setting and a minimum-security firehouse.
